Bangers and Mash - a quick and easy Irish sausage with onion gravy served over mashed potatoes. Pure comfort food for Saint Patrick's Day!
Served on a bed of mashed potatoes and a side dish of sweet peas and my Irish Soda Bread, this dish is perfect for a busy weeknight.
Every Irish recipe I've made is pure comfort food. Take my Instant Pot Guinness Beef Stew as an example. It's packed with chunks of tender beef, potatoes and carrots, and rich and flavorful broth. This recipe for Bangers and Mash is no different. Juicy sausages are sizzled in a skillet (cast iron is the best here) with flavor-packed onion gravy. This dish is so easy to make and perfect for busy weekdays, not only holidays.
Ingredients (your shopping list):
- potatoes
- Irish bangers sausage (beef, pork or lamb sausage)
- butter
- sour cream
- salt and pepper
- olive oil
- onion
- garlic
- beef stock
- cornstarch
How to make it?
- Start by making mashed potatoes. Use your preferred method. I use my Instant Pot Mashed Potatoes recipe.
- Slice the onion. Measure out beef stock and whisk it with cornstarch.
- In a skillet, heat up olive oil. Brown sausages on each side. Remove from pan.
- Add butter to the same skillet. Add onion and garlic. Saute until fragrant and nicely brown. Add beef stock and cornstarch mixture. Simmer until thickened into a sauce. Season with salt and pepper. Add sausages back to the gravy and heat it all up together.
- Serve sausages with gravy on a bed of mashed potatoes and a side of green peas.

What sausage should I use?
I was actually able to find Irish bangers, which are pork sausages. They are already cooked, just need to be browned and heated up. You can use pork, beef or lamb sausage.

Ingredients
- 1 lb russet or red potatoes
- 1 tablespoon butter
- 2 tablespoons sour cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 pork sausages I used Irish bangers

- 1 teaspoon minced garlic
- 1.25 cups beef stock
- 1 tablespoon cornstarch See note
